Lemon Crumb Muffins


Another recipe from Taste of Home magazine but I scaled it down since the original recipe made 40 muffins. If I haven't said it enough already, I LOVE Lemon. :) These muffins hit the spot.

Lemon Crumb Muffins

Batter:
3 c Flour
2 c Sugar
1/2 t Soda
1/2 t Salt
4 Eggs
1 c Sour Cream
1 c Butter
1-2 T Grated Lemon (Lemon Zest)
1 T Lemon Juice

Crumb mixture:
1/2 c Flour
1/2 c Sugar
1 T Butter

Lemon Juice:
1/2 c Sugar
1/3 c Lemon Juice
Mix up the batter, but don't over mix. Pour in muffin tins. This recipe made about 20 muffins.
Crumb mixture
Sprinkle over the top
Bake at 350 for 30-35 min
Mix up the Lemon Juice and Sugar syrup
Pour the syrup over the top of the warm muffins
